Salmon Patties and Creamy Cucumber salad.

Perfect for these hot days coming up when you don’t want to turn on the oven.

Salmon Patty

  • One 14 oz can of canned salmon (drained)

  • 1/2 cup breadcrumbs

  • 1 egg

  • 1/8 cup diced onion

  • 1 tbsp relish

  • 1 tbsp dried parsley

  • Few dashes of hot sauce

  • Salt and pepper. (See The Go to Recipe)

Instructions:

Mix all to combine.

Form into 4 equal patties.

Cook at medium heat, on oiled skillet until golden brown and internal temp of 135.

Cucumber Salad.

  • 1 peeled cucumber

  • 1 small onion

  • 1/2 cup mayo

  • 2 tbsp white vinegar

  • 2 tsp sugar

  • Salt and pepper to taste

Instructions:

Slice Cucumber and onion in equal thickness. Toss together breaking onion slices apart.

In a separate bowl combine remaining ingredients until well mixed.

Pour dressing over cucumber and onions tossing to coat evenly. Chill in Refrigerator for 30 minutes.
