Jalapeño Popper Mac & Cheese
Do you like macaroni and cheese? Do you also like tasty little jalapeño poppers? Ever want to mix the two together to get a cheesy pan of deliciousness with a hint of spice? Then this is the recipe for you. Have it for dinner, make it for a side or take it to your next family reunion because this recipe is a crowd pleaser.
1 box elbow macaroni
1/2 medium onion diced
6 to 8 slices of bacon diced
2 jalapeños sliced
1 box cream cheese cubed
1 cup heavy whipping cream
2 cups of meltable shredded cheese of choice (I used macaroni and cheese blend for this recipe.)
1/3 cup bread crumbs
3 tbsps butter
Boil pasta and drain. Follow box.
Combine onions and bacon in skillet on medium heat, seasoned with salt and pepper. Cook until onions are translucent and bacon is rendered and crispy. Add in jalapeños and toss until till slightly cooked.
While onions and bacon are cooking, combine bread crumbs and butter in separate pan. Cook on low heat until butter is melted. Mix until bread crumbs absorb all of the butter.
4. Back to the onions bacon. Pour heavy whipping cream into that skillet on low heat. Add in cream cheese and stir until melted. Add shredded cheese and stir till melted.
5. Dump cooked macaroni noodles into greased 9x13 pan. Pour cheese mixture on top of the noodles. Mix until all incorporated. Spread until mixture is level. Sprinkle bread crumb mixture on top. Bake for 375 for at 30 minutes or until top is golden brown.
